Summer Treats: Lemon Bars

One of my all time favorite treats is lemon bars in the summer. Thanks to my grandmother spoiling us, every bite is trip back to my childhood.

Although I was never able to get my hands on gram’s recipe, I’ve gotten pretty close and they are one of my most requested desserts.

Summer is winding down and that means citrus is going out of season. There’s still time to make a batch while lemons are at their peak.

Since you’re already at it squeezing lemons, make some homemade lemonade, grab a couple bars and kick your feet up on the patio with your favorite book.

Ingredients

For the Crust

1 cup butter, softened

1/2 cup white sugar

2 cups all-purpose flour

Lemon Filling

4 eggs

1 1/2 cups white sugar

1/4 cup all-purpose flour

1 lemon, juiced

2 small limes, juiced

Powdered sugar

For Dusting

Green decorating sugar

Instructions

1.) Preheat oven to 350 degrees F (175 degrees C).

2.) In a medium bowl, blend together softened butter,

2 cups flour and 1/2 cup sugar. Press into the

bottom of an ungreased 9x13 inch pan.

3.) Bake for 15 to 20 minutes in the preheated oven

until firm and golden. In another bowl, whisk together

1 1/2 cups sugar and 1/4 cup flour. Whisk in the eggs

and lemon juice. Pour over the baked crust.

4.) Bake for 20 minutes in the preheated oven. The

bars will firm up as they cool.

5.) After bars are cooled cut into squares, place on

serving tray, dust with powdered sugar.
