This delicious creation was inspired by the use of pomegranates for the Muslims Food Blogger Challenge and would make the perfect addition to any spread! Brought to us by Chaiandchurros.
INGREDIENTS
- 1 cup pomegranate arils
- 1 cup chickpeas
- ½ cup diced cucumber
- ½ cup diced red onion
- 2 tablespoons chopped cilantro
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt, to taste
- Ground black pepper, to taste
INSTRUCTIONS
- In a large bowl, mix all ingredients. The salad is ready to be served.
Reviews
I make this constantly and everyone loves it. I do squeeze the starchy bit off the garbanzo beans which is a little time consuming. Basically, it takes about an hour to make (between de-pitting the pomegranate and squeezing the starch off the chic peas and making the rest) and then ten minutes to eat. BAM! Best salad ever.
I would not classify myself as a health nut, but darn it, this is so good that it’s gonna make me vegetarian!
